A Belated Merry, Merry and Almost New Year!

Hey Y'all!

Well, the last time I hopped on the ol' blog it was right before Thanksgiving. And. What I like to call the 2013 time warp. It seemed like right after Turkey Day everything was on warped speed and things had to be done, done, done! Before I knew it, Girls Weekend Christmas Palooza was over and Christmas was a mere 14 days away. Whew. I was busy with school and then right before we got out for winter break, I was hit with the good old sinus infection, plus double ear infection. So. That is how I spent my time through Christmas, getting better! I have also had to go back on some prednisone for various issues, so that has added to the fun too. One of the things that triggered from my sinus infection was a tooth issue that I have been dealing with for a few months. It really hasn't been that bad over the months, but with my sinuses going crazy it has kicked my tooth "issue" and pain into high gear. I am hoping the dentist can fit me in sometime this week because this has not been fun. Tummy pain I can handle any day, tooth pain NOT!

Anyhoo. I am still enjoying my Christmas decorations. Y'all know how I just love the lights! I guess I will take everything down around the first. One nice thing about winter break this year is that we don't have to go back to school until January 6th! So I am able to really enjoy this next week. Except for being in pain, I have quite enjoyed the past few days of watching tv, napping (when I can) and piddling around the house. Here's a pic of the entertainment center with this year's decorations!


I also have a new addiction... no crochet/crochet scarves!

This year was a "pinching the pennies" Christmas. I have had a few expensive months! Mitzi Mazda had to have some service and then my heat went out over Girls Weekend Christmas Palooza. So I had to be really creative with my gifts this year. Since I am a "maker" I came across some really neat crafts on You Tube! I am sure you are well aware of the "ruffle scarves" that have been very popular with knitters and crocheter's over the past year. I think they are so cute, but LAWDY it takes forever and a day to knit one. One night while on Pinterest, I came across an easy way to make them and y'all... I had some great gifts!

I made a silver, gold and white one for my Mom...

This one for my Mom's friend Jean.... She hosted a great Christmas Day Brunch and I had to take something to her!

And a red sparkly one for my Mom's friend Pat... She loves the red and the sparkly!

I have some more colorways to work on this week. Would you like to make one for yourself or someone else? I promise, if you can hold a crochet hook, you can make this scarf! I started out by watching this tutorial on You Tube. I vary the stitches I pick up just a bit, depending on how flouncy I want the scarf to be. If I want it really flouncy I will pick up 12 stitches, less flouncy and I will do 9. I can make a scarf in about 20 minutes. Not bad for a new accessory. The yarn runs about $4.99.. but AC Moore and Michael's usually have it on sale for $3.99. Check out the video to get going on your own scarf!


This is a second video that I watched that really helped with beginning and ending the scarves. This video is very thorough with the demonstration and shows you what the scarves look like with different loops added.



I'll be back tomorrow with hopefully a tooth update (keep your fingers REALLY crossed) and another easy craft and recipe for New Year's!

Brrrr…. Chilly!

Hey Y’all!

Today was a very cold day. We woke up to temps in the 30’s and the wind was howling! I chose to stay in my jammies as long as I could today! But, I worked really hard! All of my Christmas decorations and trees are up and the house is cleaned and ready for Thanksgiving visitors. I may need some time to recover from all of this hard work! Pitty Pat and I stepped out about 3:30 for a chilly walk, and then back under the covers we went! I only ventured out to change the laundry from the washer to the dryer and then to fold it. In fact, Pitty Pat and I are about to head back to bed for good in a few minutes!

I am really enjoying my Christmas tree lights. I haven’t taken a picture of the whole set up yet, because I am playing around with getting a new garland to go around the entertainment center this year. The one I have is nice, but it is falling apart. So I plan to head out this week to see what my (not so expensive) options are! This year I did have to add little something to my green tree. This tree is very old… at least 15 years. It is starting to brown in some spots and the limbs are not holding up well. I had a fake snow blanket that I decided to break apart to add a snow effect to the branches. I love the way it makes the tree look! I might decide to flock this tree next year (add a fake snow effect on the branches with paint) so it can last even longer. I am enjoying this tree all over again! Here’s a quick pic… remember, I am not done decorating this part!

Sadly, I did not get in any knitting this weekend. I really wanted to get my house cleaned and my decorations up. At least I have only two days of school this week and all of my hard housework is done. Now I can kick up my feet and knit over Thanksgiving vacation!

It’s Pumpkin Time!

Hey Y’all!

I hope everyone had a great week! I didn’t get to go to any turtle nest inventories this week because of school, but there are several this week that I plan on attending. The last nest in Garden City hatched on Friday, so there will be a nest inventory tomorrow night. I definitely plan on being there. It is the last nest of the season, which is a little sad. I will post pics as soon as I can!

Last night we had a faculty and staff get together at my assistant principal’s house. We had some very yummy barbeque. Everyone had to bring a dish to share. So yesterday morning while drinking my coffee I went on the search on Pinterest to find something quick, easy and delish! Enter the Pumpkin Fall Dip! This is a cinch to make and it is so yummy when you pair it with Gingersnaps! Bonus.. this dip makes A LOT!

To make Fall Pumpkin Dip you will need:

Pump Ingred 

1 15 oz can of pumpkin.. NOT pumpkin pie filling

1 5oz box of vanilla instant pudding (do not make the pudding, just use the pudding powder)

2 tubs of Cool Whip (The recipe calls for plain Cool Whip, but I like to GO BIG OR GO HOME. So I used the Extra Creamy one!)

1/2 teaspoon of pumpkin pie spice

1/2 teaspoon of cinnamon

A bag of Gingersnaps and/or Nilla  Wafers

Combine all of the ingredients except for the Gingersnaps and Nilla Wafers. Mix well.

Mix Well

 

After mixing, place the dip in the fridge for a few hours. It tastes just like PUMPKIN PIE!

Then serve! Here’s a serving dip…. When you have to go to a party and you need to bring a dish, head to Dollar General! It is one of my favorite stores! For some reason all of my serving dishes are at school. So I headed to Dollar General and picked up a huge serving plate and bowl for the dip for under $2. The nice thing about that is you can always leave the dishes at the party if you need to leave and  you don’t have to worry about getting your serving dishes back! This is great, especially if your dish is still being enjoyed!

Alrighty, I think I am off to the beach to get some reading done. It is so quiet around here because all of the tourists are finally gone. It will be so nice to have some peace on the beach!

Girls Weekend Christmas Palooza- 2012 Edition!

Hey Y'all!

Wow. I have gotten behind on my Christmas Sock of the Day postings! Last Thursday was a pretty rough day and I was not feeling the Christmas Spirit at all. Then on Friday I kicked of Girls Weekend Christmas Palooza 2012! Y'all know I love to have company and entertain, so Friday was a busy, busy day!

We will start back with the Christmas Sock of the Day tomorrow. Ahem. I may have purchased a few more pairs this weekend. But I say, if it makes you happy and it doesn't hurt anyone else... GO FOR IT!

We started off our weekend with a yummy dinner at Logan's Roadhouse. I won a gift certificate for a free meal at our last faculty meeting and Friday was the last day I could use it. After dinner we hit a few shops and then closed down the mall!

Saturday we slept in a little and I made a yummy breakfast. I make Paula Deen's Gorilla Bread.. that is a must have on our weekends! This year I also ventured on to Pinterest and used a few recipes too! I made make ahead French Toast, which was DIVINE, and so easy to do! I also made a hash brown, egg, cheese and bacon "muffin" of sorts, except it wasn't a muffin! I will be back to post the recipes and links tomorrow.

That got us off on the right start! We did a lot of shopping and got a lot accomplished. We ended up at one for my favorite places in Murrells Inlet for lunch- The Dead Dog Saloon! We spent the rest of the afternoon shopping and just enjoying hanging out!

This morning the girls were ready for breakfast leftovers and then they needed to hit the road. Sadly, we did not get the annual Julia and Pitty Pat Christmas Card photo taken. I am not sure about cards this year. If I do them, they may be New Year's cards... I am just not sure!

I have taken tomorrow off to rest.. I have been really tired again lately, and running around this weekend was fun.. but tiring! I plan to take it easy tomorrow and work on a few Christmas gifts. I even hit a consignment store or two! But I am really looking forward to just taking it easy!

Tonight I plan on watching a couple of Christmas movies and bonding with Pitty Pat and my knitting needles!

Christmas Sock of the Day.. 3! Turkey in a Crockpot and Corn Puddin' too!

Hey Y'all!

Wow. If you follow the Twilight series and you haven't seen Breaking Dawn 2 yet, Oh My. You need to. I had a lot to ponder after the movie yesterday so I didn't get back to post. Wow. It was good!

Any hoo... here's today's Christmas Sock of the Day... From now on I think I will call it.. CSOD..
This sock is an oldie but goodie. I technically wear them past Christmas because I think gingerbread is great year round! I love this sock because it has all of the baking ingredients for Gingerbread Men!


AND! Speaking of cooking... hee, hee... Did you like my segway?
Here are the Thanksgiving recipes I have been promising for DAYS. Oh. They are worth it. You can use them for Christmas!

As I told you in my last post, I, JKP have never, ever, ever, baked a turkey before. I know. GASP. But. I decided this was the year and my crockpot was going to do all of the work. :)

For Crockpot Turkey you will need...


A SLOW COOKER LINER (Do not skimp on this. You will be a very sad monkey if you do.)
1 packet of onion soup mix
1/2 cup of orange juice
1 can of WHOLE BERRY cranberry sauce
1 turkey breast (anywhere from 3 to 5 pounds. Mine was a 4 and a half pounder. I bought mine fresh not frozen. With all of my digestive issues, I don't need a 20% solution of who knows what in a frozen turkey sending me to the hospital!) ALSO take into account the size of your crockpot. That will really determine what size of turkey breast you can get.

Now. Line your crockpot with the crockpot liner. You can find these on the aisle with the aluminum foil and plastic wrap.
Take your turkey out of it's packaging. Check inside to make sure there are not any bits or pieces. Just in case. Place your turkey in your crockpot and WASH YOUR HANDS!

Now in a bowl, combine the orange juice, onion soup mix, and the  whole berry cranberry sauce. Mix well. Pour over the turkey. Put on the crockpot lid. Cook on low for 6 and 1/2 hours or until your meat thermometer measures 170 degrees.


 
Warning. Your house will smell so yummy!
I am also SAD to say.. we ate this so fast, that I did not get a final picture. But. It. Was. Oh. So. YUMMY!
 
Now every turkey needs a sidekick... right? I present you with Crockpot Corn Puddin'.
 
For Crockpot Corn Puddin' you will need....
 
 
 
2 cans (10 ozs) of whole kernel corn ( DO NOT DRAIN)
2 cans (14 ozs) of creamed corn
2 boxes of Jiffy corn muffin mix
1 stick of butter
1 8 oz container of sour cream
 
Combine all ingredients into a bowl and mix.
 


Then pour into a lined crockpot. Cook on low for 3 hours or high for 2 hours.


 
It is the perfect sidekick to your turkey! And, again, I was slack with the final pics!
 
I hope you enjoy these recipes. They are so easy and they taste like you went to a lot of effort. I will say, the turkey sammies we made from the left over turkey were just divine. The crockpot will make your turkey very juicy and moist. :)
 
And, one last thought...  I think the reason I never attempted a turkey before was because of the movie Christmas Vacation. You know the scene. The one where they cut the turkey.. AND it basically decompresses in front of the family? OH LAWD. I did not want that kind of failure. :)
 
Now. Guess who has been nominated to cook Christmas Dinner at my Mom's this year? I better start looking for recipes!

White Chocolate Covered Popcorn Goodness

Hey Y'all!

Well. I finally made it! I am sitting here in my jammies, drinking coffee and blogging. Ahhhh..... I am so happy to finally be on Winter Break! Pitty Pat even let me sleep in until 8:15 this morning and that was such a gift! He is very excited that I am home. He keeps following me from room to room to see if I am leaving for school!

I woke up this morning, turned on the Christmas Tree(s), brewed some coffee and just took it easy. Every year, right after I get out of school, I always meet my college roommate Rose for lunch. We are carrying on our tradition today! So, I had better make this blog post quick because I am sure she does not want me picking her up for lunch in my jammies. Even if they are cute! :)

As I mentioned a few posts ago, I participated in our school's annual goodie exchange. There were 29 folks who participated this year. I really didn't feel like baking (yes, I think something is wrong with me), but I wanted to do something that was festive and different. So, logged onto my new favorite pastime (Pinterest) and found some great ideas! I finally settled on a recipe for White Chocolate Popcorn. Because let's face it, who doesn't love salty and sweet?

To make the White Chocolate Covered Popcorn you will need:



2 bags of microwaved popcorn (you can use butter, I used light butter!)
16 oz of white chocolate chips melted (melt these over the stove, not in the microwave)
1 cup of M and M's (I used green and red)
2 cups mini marshmallows
2 cups of pretzel sticks broken in half, not crushed
About 1 cup of melted dark chocolate (I got a bag of meltable chips from AC Moore and used those!)
*You can also use about a cup of peanuts too. Since I am allergic to those, I left them out!
2 cookie sheets or jelly roll pans

To start, pop the popcorn according to your microwave directions. Place the popcorn in a big bowl and make sure to remove any unpopped kernels or ones that don't look edible. In another bowl, combine the M and M's, pretzels, and marshmallows.

Over low heat, melt the white chocolate chips. Stir constantly. When melted, pour the mixture over the M and M's, pretzels and marshmallows until evenly coated.


Now, for the next part, you can use a really big bowl, or a huge gallon size Ziploc bag. Since I was making two batches I did both, and they both worked well.

Add the white chocolate covered mixture to the 2 bags of popcorn. Stir or shake well.



Once you see that everything has been covered and there are no clumps, spread the mixture out on a jelly roll pan or cookie sheet. You will need two because the batch is large.  I covered mine with parchment paper. Break up any clumps with your hands. While the mixture is "resting" melt the dark chocolate chips in the microwave. I started at 30 seconds and stirred well after each session. It only took about two 30 second intervals for my chips to melt.



Using a spoon, drizzle over the popcorn mixture. I have a heavy hand and I was very LIBERAL with the chocolate. The more, the better!


Now, pop the trays into the fridge for about 15 minutes. This will allow the chocolate to harden. When you remove the trays from the fridge, you can break apart pieces of the popcorn. Kind of like brittle! Then place in goodie bags if you are giving them away as gifts... or stand there and eat it all!!

Got Milk?

Hey Y'all,

Well, as promised, I BAKED.
Here's the total of the spread I made! I started last night, I had a few of the doughs that had to be refrigerated overnight. I started baking at 8 this morning and just finished. As you can see, I don't have my sugar cookies cut out for now, but I decided it was time for me to back away from the flour!!

Monkey Business

Hey Y'all,

Yesterday I mentioned in my post that I made some yummy Monkey Bread for my friends Toni and Marie who visited last weekend. This was a fantastic way to start our day long marathon of shopping. The best part is, refrigerate these when you are done and they are even better the next day! Here's the recipe with pics!

To make Paula Deen's Monkey/Gorilla Bread you will need:
1/2 cup granulated sugar
3 teaspoons cinnamon
1/2 cup (1 stick) butter
1 cup packed brown sugar
1 (8-ounce) package cream cheese
2 (12-ounce) cans refrigerated biscuts (10 count) (I use Pilsbury's Buttermilk ones)
1 1/2 cups coarsely chopped walnuts

Spray your bundt pan with nonstick cooking spray. Then mix the granulated sugar and cinnamon in a seperate bowl. In a saucepan, melt the butter and brown sugar over low heat, stir this well!
Next, cut the cream cheese into 20 equal cubes. Press the biscuits out with your fingers and sprinkle each with 1/2 teaspoon of cinnamon sugar. Place a cube of cream cheese in the center of each biscuit, wrapping and sealing the dough around the cream cheese. You will have a half moon looking biscut.
Sprinkle 1/2 cup of the nuts into the bottom of your bundt pan. Place half of the biscuits with the sugar and cream cheese in the pan. Sprinkle with more cinnamon sugar, pour half of the melted butter mixture over the biscuits, and sprinkle on 1/2 cup of nuts.

Layer the remaining biscuits on top, sprinkle with the remaining cinnamon sugar, pour the remaining butter mixture over the biscuits, and sprinkle with the remaining 1/2 cup of nuts. Bake for 30 minutes. Remove from the oven and cool for 5 minutes. Place a plate on top and invert.



I served mine with hot coffee and a side of fruit. Trust me, it was a HUGE HIT! So if you want something yummy to make for Christmas morning.. this is it!!
